I am so happy to receive your reply and am equally happy to reply, likewise, to your query "how do I go about finding a Skip for this recipe". As you may have gathered from the responses to the general topic of Jerky recipes, it seems as if nearly everyone has a favored recipe for which no one else's recipe has quite managed to attain the proper balance of spices,uniqueness and just plain peculiarity.
The secret of a really good Jerk is in the Jerk itself.
Believe me when I tell you that you may search the World around and still not stumble upon quite the Jerk that Skip is. Did I ever tell you the story of the "hey, this hatchet will be just fine once I find my duct tape"? Oh, well, that is not answering your question.
The fact is that Skip is a difficult commodity to find: you have to have brilliant insight and plain dumb luck, much like that of the gourmet hero who thought to use a Pig to mine for ground fungus. To be truthful, I have been unable to find another Jerk who matches Skip's innate qualities. I must admit that he may be one of kind. So, my Quetico buddies and I sometime ago decided that perhaps sharing our Jerk with fellow Quetico sojourners would mirror an excellent attribute of all wilderness travelers.

We were just informed that EBay, or at least its lawyers, despite its inital enthusiasm at our offering nearly 200 pounds of aged Jerk for auction, has discovered some codicil deep in the Judeo-Christian ethic that prevents EBay from putting our item up for bid.
SO.....if you send to me a stamped, self addressed packing crate I'll be glad to send the Jerk along. If said crate reaches me before our trip to the Quetico this year, I'll throw in what we laughingly refer to as "Skip's tent" and, also, a complete Jerk recipe book.
When you receive your Jerk, maybe you can get him to tell you about Dottie's Hot Chili and the subsequent redrawing of the continental divide.
