When it comes to packs, we use both a Duluth Pack for sleeping bags, tents, clothes, rain fly, etc. We use a Dry Bag for food and miscellaneous gear, and we take an Igloo Ulta 50 for the rest of our meats and vegetables. We lash the Ultra 50 to a Pack Frame that I rigged to carry it and we never eat freeze dried food. As for the photo's, I've seen lots of people trying to paddle with their packs that high. We pulled 3 people out of Argo after they went over in the wind. Their Outfitter, and I use the word with care, showed them how to load their canoe. Only had 1 small case of hypothermia.
