when it has been windy enough i have had 3 canoes hold on to each other and have the 3 bowmen using their paddles and a rain fly to make a sail. doing this has allowed me to travel in waves too large for single canoes safely, and we go faster than the pace we would be able to paddle, of course we have to be going in relatively the same direction the wind is going. i have the middle people hold the canoes together, and the stern paddlers steer.
