Sounds like you have a great resource.  Taking the canoe down a troutstream in the winter time - that sounds like fun.  Just don't tell me that you have super BWO fishing or I might pack and head down now!!!

Numerous spring fed rivers that are floatable year round. Winter has become my favorite time to hit the rivers - usually nobody else all day. Do 3-5 nite gravel bar camping trips during the week in Summer. Wouldn't think about paddling on weekends during the Summer because of the throngs of drunk and rowdy weekenders. thankfully they don't know the rivers still flow during the Winter. Several rivers have rainbow and brown trout and others have smallmouth bass.
