Use the Cheesy Chicken  Enchilada dish QP mentioned, along with the Mexican seasoned Jack Links gb. Grate some pepper jack cheese, rehydrate some salsa, roll it all up in a warm, lightly buttered tortilla, and you'll think that you're in a Mexican Cantino. Great meal, needing no other dishes, unless you want hot Sopapillas for desert. For those, fry your tortillas in hot oil and butter with sugar and cinnamon. Another idea is to use leftover syrup in the butter. ;)
