Lipton makes some Chicken Fried Rice that's easy and pretty tasty.  I like to throw in a few extra freeze dried peas so I don't miss my veggies.  Last year I took freeze dried peas and sweet corn.  A side dish of veggies might not sound too appetizing to die-hard meat & potatoes guys but they sure tasted good to this veggie lover.  Another plus - virtually no weight.
