My mother a Kentuckian would used the rendered fat for cooking. I remember the tin that used to stay on the counter where she would store the fat for this purpose. The renderings make a flavorful addition to corn bread and are great for cooking eggs and hash browns in.
On Saturdays my wife makes me a H.O.A.R. (Heart Attack on a Roll) cooking the eggs in the renderings of the bacon. The trick to keeping the eggs and hash browns from sticking is to let the suspended bacon particles sink to the bottom of a holding vessel and dip the grease from the top. Another use for the fat is to soak a paper towel with it makes a good fire starter. BTW I have low cholesterol not what I would recommend for someone that has a high count. flp |
