I have used the GSI 10" dia. cast aluminum oven for years.  They weigh 4lbs and they also work great for frying fish.  They are available on line from Campmor (usually not in the catalog).  Be sure to take some baking pans (aluminun foil disposables work fine)for making cakes or breads.  These will fit inside the oven and greatly improve the baking quality.  Creating some air space between the bottom of the dutch oven and the cake pan will also improve baking quality.  I usually just use some small rocks or pebbles to do this.

Most of the time we use the "just add milk" baking products available in grocery stores.  We try to avoid the mixes that require egg.  If you take eggs on your trip, don't forget the brownie mix.  Our favorite is the Martha White Blueberry Cheese Cake supplemented with fresh Blueberries.
