Dried/Dehydrated eggs are terrible.  They are best served with lots of flavorful additions until you can no longer taste the eggs or discern their texture.  And yeah, this includes the Egg Store product.  Fresh eggs are bulky and heavy.  

I don't carry fresh much anymore, just because the 'opportunity cost' of the space they consume in my food pack is too high.  There are too many other things I'd rather use that space for.  So I carry dehydrated.  I wouldn't bring them at all, but my trip partners seem unwilling to go eggless on a trip.  If it were just me, I'd just eat pancakes or oatmeal for that extra breakfast or two.  I'll eat a giant omelet at Perkins the day after I get out anyway.
