Cut them in quarters, rub with olive oil, sprinkle with fresh basil and dry them in oven or outside on screens in the 80' heat.
Sun dried tomatoes keep a long time and are great in sauces or on trips ;D
I love tomatoes, I wish I had your problem ;)
