I've never been a fan of "powdered" eggs, my time in the military probably has something to do with that.
Never the less, I bought a single packet of the Egg Mix from the Egg Store and was pleasantly surprised.
Last May I used it and some Porcine mushrooms and onions to make a omelet and I can honestly say it was really good ;D
I followed the advice about mixing well and getting ALL the lumps out and went from there.
I also used in a Brownie mix which came out excellent.
Buy the single packet for $3.00 ? and try it out before you go on trip.
I won't go as far as to say its as good a fresh but in omelet or baked goods, I don't think many people could tell the difference?
