Browntrout...Cooks pretty evenly, IMHO. I usually finish it up with the inner cover off-crustier! Heat loss is a yes, but not a huge issue with practice and I have never run out of fuel due to that! The pans also serve as our frying pan. Toyed around with the idea of hole sawing the cover to sort out the crust issue, but I am a little particular about my bread. ;) Makes good pizza too. ;D
