Actually you don't need to do anything in person to register your canoe in MN. I have done this with several canoes and have never been to a license branch. You need to go to the website listed above and print out the form for canoe registration (I think it may actually be for more than only canoes). If I remember right, there are 2 fees you need to include. To be safe I would call the license office to know for sure what the cost is. Then mail the form and payment in and they will send you the sitcker. And, as mentioned above, you just need to display the sticker with the expiration year on it. I have found that the license office is very helpful and responsive.
