If you are looking for a quick Mexican or Tex-Mex meal, beef and bean burritos are easy to do.  

Dehydrated seasoned beef/hamburger, an "add water only" refried beans (I like the Rosarita brand in a plastic bag), dehydrated salsa, shredded cheese (cheddar is OK for this), onion, and tortillas (the over-sized ones are particularly good for this).  A couple of these makes a pretty good meal.  

Of course, I don't share a tent when on canoe trips.
