I think my favorite is:

Pan seared walleye laced with Paul Prudhome's blackened redfish seasoning
Herb seasoned cous cous
Cache Lake garlic fry bread
Backpacker's Pantry strawberry cheesecake
Nalgene of "iced" tea (a nice cab would work, but I have to draw the line somewhere!)

After dinner with a nice sunset and comfortable perch ... a modest portion of single-malt scotch.
