Anyone ever use dehydrated sour cream powder for cooking on trips?
There are a couple of recipes that I'm looking at that call for sour cream. The one I'm most interested in runs something like this: 2 tbsp olive oil 2 lbs. hash brown potatoes 1/4 c. mayonnaise 1 med. onion, chopped 10 oz. cheddar cheese, grated 1 c. sour cream 1 can cream of mushroom soup Of course, I may play with the recipe a bit by adding cubes of chicken or ground beef. I'm thinking a "one-pot" meal here that I can park in a reflector oven. dd |

Well, I whipped up the recipe this weekend and it wasn't half bad. I did drop out the mayo and cut back on the olive oil. I did add some chunks of chicken. My source for hash browns was a couple of packages of the dehydrated product from Hungry Jack.
For a tripping meal, you'll need a larger reflector oven to make the full recipe. I put the mixture in 9 X 13 pan, which was just about right. Although tasty, I think most would prefer to punch it up a bit. You could add a few jalapenos or perhaps a bit of Tabasco. If you didn't want to go quite so spicy, perhaps a bit of sausage to replace the chicken. |

Dump the cream of mushroom soup, and replace it with dried wild mushrooms, water and milk powder. Costco sometimes sells big plastic jars of dried mushrooms for cheap, or try Italian food stores (better mushrooms, more expensive) or Chinese food stores (worse mushrooms, cheaper).
East Indian food stores are good places to find dried onions in decent quantities at a reasonable price. Even if you have a dehydrator, it stinks up the house, so I just buy mine. This stroganoff recipe is half-decent, but might really be better with that dehy sour cream, if it's any good: 200 g noodles 3/4 cup dehy ground beef (orig 1/2 lb) 3/8 cup dried wild mushrooms chopped 2 tbsp milk powder 1/4 tsp corn starch 1 tbsp dried onions, chopped 1/2 tsp garlic powder 1 tbsp dried parsley 1 tsp salt 1 tsp pepper It would probably be better with steak rather than ground beef too - that will have to be something to test this summer. |
