I changed jobs two months ago.  I love the new job, but when I was offered it, I told the boss I had to take off 11 days in June for a canoe trip.  He said that was really bad timing given the work schedule for my new job.  I told him that I already had committed to those dates, had other people counting on me, and could not change them, so I would not accept the job if I could not have those days off.  I also promised to do prep work before I leave to minimize the impact while I am gone, but I was serious and would not have taken the job without the promise of the time off.  I am fortunate to be in a financial position to make that choice, but also value balance and sanity in my life.
