Yes. I know that some of you are probably not cauliflower fans, but hold your objections for just a moment.
If you are looking for a lower calorie and lower carb alternative to mashed potatoes, this could be a viable alternative. There are a variety of recipes (do a google search) for cauliflower mashed potatoes and they all have some of the same steps involved ... steam the cauliflower head (sans excess stems/greenery) and mash/blend/puree until the consistency of mashed potatoes. Then add whatever seasonings you might prefer. Most add some level of garlic salt or salt and pepper, but you know the drill ... add whatever suits your taste buds. However, before you add anything that might be oily (e.g., butter, etc.) you might consider whether or not you want to dehydrate for camping purposes. A medium head will compress down to a size that easily fits in a snack-sized plastic bag and rehydrates very quickly. Then after rehydation, you can add the things that return an oily texture. So far my experiments with doing this have worked satisfactorily, except that the dehydrated vegetable matter turns slightly tan. I'll try fruit fresh on my next batch and see if that eliminates the color change. Taste and consistency, however, are not significantly altered by dehydration. dd |

I'm also a big fan of root veggies. Baked with a little olive oil/kosher salt/black pepper. If you like the idea of cauliflower mashed "potatoes" , you should check out the mashed parsnip or turnip recipes too. I believe they would adapt to a suitable dehydrator camp meal with a little trial and error. |

I have had cauliflower mash potatoes before and liked then but never tried drying them. Thanks
I wonder what fried cauliflower potatoes would taste like. Potato cakes? I may need to do some experimenting also. |

I've recently been trying cauliflower on the grill. Cut a head down through the stem into a couple 3/4" thick slices. Several recipes online. Basically oil and season.
