no direct experience with the Sea Eagle, but with inflatable kayaks, yes.  They are slow and more susceptible to wind than regular canoes.   I don't like sitting on the floor either - only time I came close was in an Old Town "Next" - that seat was maybe 3 or 4 inches off the deck - I added a boat cushion to get to sit high enough to use a regular paddle.  Seems like you'd want to do the same with that Sea Eagle.  That is a new boat, just came  out last year I think.  Link to one review below.

after looking at the pic's in the review, it looks like the seat is maybe 6" or 8" high and the perspective in one picture with two paddlers does look like they are sitting high enough.
