Key Lime Pie

4 servings
1 can sweetened condensed milk (regular size)
1/2 cup crushed graham crackers
3 regular limes (or 5-6 key limes)
1/4 cup butter

1) Zest the limes, put 3/4 of zest in bowl.
2) Slice the limes in half or quarters and squeeze juice into the same bowl.
3) Open can of condensed milk and mix with lime juice and zest. Let stand.
4) Heat a fry pan and melt butter. Mix with graham crackers. Scoop into an 8" fry pan and with a fork pat it down flat covering the base.
5) Pour contents of bowl (condensed milk, lime juice, and zest) on top.
6) Sprinkle the balance of the zest on top.
7) Cover and let sit 20 minutes. No cooking. This process firms it up.
8) Serve

As you may have noticed I had a "can" in the recipe. Anyone ever see condensed milk in anything other than a can? Any ideas to transfer to different containers and remain safe?

This is really fun and simpler than you think. Try it at home and you'll be surprised. It's a fun treat on a long trip.

Yep!  It was one of the Backpacker's Pantry desserts I took last season.  They are mostly a) dump in a bowl, b) add water, c) whisk for 1-2 minutes, d) set aside for 5 minutes (or more), e) add topping (most are graham cracker crumbs), and f) eat!

They come in an aluminum pouch (which I suppose one could use for mixing, but I've found you have some difficulty getting into the corners to mix thoroughly), and typically serve 2 or 4.

In addition to key lime, my favorites from this series of desserts are (in no particular order) regular cheesecake, strawberry cheesecake, dark chocolate cheesecake, mocha mousse pie, and creme brulee.  Apple cobbler isn't bad, but requires more fixing time.

They once had banana cream pie and peaches and cream pie, but I've not see these in a couple of years, so they may be discontinued (and replaced by the more recent creme brulee and key lime).

If you are looking for something with a burst of flavor that takes little time to prepare, I think this line of products is a no-brainer.

I have used Jello Pudding Pies, which are similar to the BP products that DD uses. One ‘no brainer’ twist is that I don’t make the graham cracker crust. Instead, I just mix everything together. Less trouble and just as delicious. I do the mixing in a gallon zip bag which can be burned or packed out when empty. Cool

I’m not sure if key lime is among the available flavors.

I make that key lime recipe at home with bottled lime juice, no zest, and an 8 oz container of Cool Whip to make it creamier.  You can buy dry mix to make whipped topping and it will work on a canoe trip; works best if temps are not too hot.  Have also made the Jello cheesecakes and you can make a pie out of any Jello pudding box, just make it with less water so it is firmer.  I occasionally take a "can", well hidden in my pack, and a small can opener (or I think some condensed milk comes with a pop=top can lid)  Lips Sealed  I have also found that the Dollar Tree stores (and other dollar stores) carry regular milk in paper/on shelf cartons. Alternatively, if you repackage the condensed milk, make sure the container you put it in is sterile or boiled in water to kill bacteria and then keep it in the shade or cooler, deep in the pack, and use it within a few days.  It might be fine, there is so much sugar in it that helps retard spoiling for a while.
These dollar stores also have some other interesting items in multiple single serve packs: tomato sauce/paste, nutella, zippy cheese dip, peanut butter, etc. that work great for camping.   Wink
