It's been awhile since I tipped a canoe. Seemed to happen more often when there was nothing in it, while fishing and reaching too far out. Then my experience was similar to yours, me in the water, but not much water in the canoe.
My advice is to put into the canoe all the stuff that won't float. Then climb into the water filled but floating canoe, and paddle to shore.
If you tip a canoe with a load of packs, you will find that it will tend to take on a lot more water. You will need to paddle it to shore to empty it. Maybe put on some dry clothing, and have a smoke.
