Hey guys, I'm glad you liked the recipe! Go ahead and try your own spice mixes, I'm sure you will find something that will suite your own tastes. Personally I like to add some finely ground hot peppers to my jerky, but I have 4 daughters that love jerky too, except they like the milder version. Let me know how your personal batches turn out. Tenderquick contains salt, sugar, and sodium nitrate and sodium nitrite. I believe that some people are allergic to nitrates so be aware of that, and use the tenderquick sparingly. Don D.
