You're overly cautious. Really fresh eggs will keep just fine. I'm told they will keep for more than a week but I've never pushed it that far. The day we arrive in Ely I stop at Zup's and buy a couple of dozen fresh eggs and put them in my cooler, where I've kept my cheese and breads(pitas and flour torillas) for the 2-day drive up. The next morning (the day we head out) I repack the stuff from the cooler into our food packs and off we go. We have fresh eggs and vacuum packed pre-sliced Canadian bacon for 2 or 3 days.
