I take bacon that I freeze before the trip. We keep the bacon in a small six pack cooler. The bacon has kept up to seven days. It may keep longer but that is the length of our trip. Eggs, if they are fresh eggs will keep up to two weeks without refrigeration. My understanding of fresh eggs are ones that have not been refrigerated and you get them from someone locally that raises chickens for their eggs. I would be skeptical of eggs from a grocery store. Who knows how long those eggs have been in a distribution center before shipped to your local grocery. When we open a package of bacon and break the seal we cook the whole package. We go the second week of July and the temp is in the 70's and 80's most of the time and have had no trouble with bacon.
Sausage is another story. I think if you ate it the first two days you are there you would not have a problem. Again I would have it frozen and in a small six pack cooler if I would take sauage. The info on the eggs I got from a book on the Quetico and the guy was describing the foods he took with him.
We also take steaks for the first meal in the wilderness. Steaks on an open fire in the wild taste so good. Walleye, fresh out of the lake, the next nights meal is also hard to beat. Hope this info helps you out.
