Any meat product that is heavily smoked or salted such as sausage or bacon will keep indefinately as long as the packaging is kept intact. ( I work in the restaurant industry and teach food sanitation). You might want to find "Joel" bacon, which is an unsliced solid piece of bacon which is smoked whole. It is usually still found in specialty meat markets. (We get it at a Chicago-area German deli). They come in small pieces that is enough for breakfast for 4-6. We also take steaks for our first night in the park. Go ILLINI!!!!
