The corn is too high in non fiber carbs and a few peas is ok. Beans are ok but watch how they are fixed. What I like the best is the low carb wrap taco.  I will try that soon to see if I can make it work.  I eat some chili I make it with less tomato than most recipes call for. Chili can be dehydrated before mixing mix the dry ingredients and hydrate in camp.  Always start hydrating the meet first.

To speed things up I would recommend that you rehydrate your dried goods ahead of time.  In the case of your eggs and sausage breakfast, place the peppers and sausage in a baggie with an excess of water, bag that in a gallon ziplock (for leak protection) and hydrate overnight.  Drain the excess and continue with your recipe.

Another thing you can do to speed up the eggs thing is to boil it in a freezer-grade quart ziplock bag, that way you're heating up water for coffee/tea and cooking your eggs.  And since nothing gets fried cleanup is pouring out the hot water....much easier.

I saw you mention veggies so I'll mention that I've tried the Corn Salad and Peas and Corn Salad from <a href=" (You need to Login or Register to view media files and links)">here</a>(NAYYY) are yummy.  Also tried the roast beef spread and it is very good too (probably wrapped up in a lo-carb tortilla.)  The packages are a bit pricey, but you could emulate the recipe from less expensive bulk ingredients.

Another thing would be tacos using f/d ground beef and those lo-carb tortilla shells.

Are beans too carb-y for you?  Lentils?  How about a chili?

I've never been a fan of "powdered" eggs, my time in the military probably has something to do with that.
Never the less, I bought a single packet of the Egg Mix from the Egg Store and was pleasantly surprised.
Last May I used it and some Porcine mushrooms and onions to make a omelet and I can honestly say it was really good Grin
I followed the advice about mixing well and getting ALL the lumps out and went from there.
I also used in a Brownie mix which came out excellent.
Buy the single packet for $3.00 ? and try it out before you go on trip.
I won't go as far as to say its as good a fresh but in omelet or baked goods, I don't think many people could tell the difference?

I get my eggs from ( (You need to Login or Register to view media files and links)) Walton feed.  I also get dried vegetables  there.  There green beans, carrots, and others are good.  These eggs are very plane eggs and they make very bland scrambled eggs.

Onetime somebody gave me a 5 pound bag of dried egg powder that came from some government welfare program. They actually didn't taste too bad and would be perfect for canoe camping.  I've tried to them in bulk at grocery stores but no luck so far.

Some of Jif Peanut butter is low carb and it is packed in plastic Read the labels some is not low carb

12 oz of imitation crab dried to 3.5 Oz.  Rehydrate with 8.5Oz water.

At home place 6 Oz crab per serving on dryer at 130°F until completely dry.  Bag it up one meal per bag. 
Additional ingredients to pack
Olive oil (1/2-1 oz/person/meal)
Dried Egg (3 table spoon /person/meal)
Molly Mcbutter (2 tea spoons /person/meal)
Salt and pepper
Cheese either Hoffman hot pepper cheese of Dofino Chipolata Gouda
     (1 to 1&1/2 oz /person/meal about ¼ inch cut off the end of the Hoffman bar)


At camp
Put crab, Olive oil and 6 Oz  water in skillet.  Put on fire until it starts to boil then wrap it in a towel and set it aside.  Mix the egg with about 2 oz water and let it soak.   Let this set for 15 minutes.  Put the crab back on the fire again until it boils and wrap it in a towel again and let it set for another 10 minutes.  It should be cool enough to hold your hand on the bottom of the pan otherwise the eggs will cook in lumps.  Mix the egg in well with the crab. Chunk and add the cheese cook on medium heat removing the lid frequently to cut into chunks and flip.  When almost done add Molly Mcbutter and mix it in

LET COOL
Add 4 TBL spoons dry egg and mix well.
Cook on low heat without lid.   Pore off excess liquid.
Add 2 slices sharp cheddar cheese.
Heat to mix cheese in.

I am always looking for meals that I can eat and they must be very low carbohydrate.  Later I will add a couple of good breakfasts that even carb eaters like but they take more than 30 minutes to prepare.  I would like a fast breakfast for those travel days when you want to get on the water fast.  I am jealous of the people that can have a bagel or oatmeal and go (that is poison to me). I can eat very little not fiber carbohydrates. Please post any and all LOW CARB suggestions.
