I've had good success with gingerbread, pound cake and corn bread mixes.  I have NOT been able to make brownies in the Bakepacker.

I have a regular "BakePacker" that I use to make muffins on canoe trips.  I want to use this nifty gizmo to expand my baking horizons on next years trips, so this off-season I have been trying different recipes from the BakePacker cookbook.  I found a decent egg/sausage casserole that I tried out on my wife...if she likes it anyone will like it....and she does!

But I wonder -- do any of you paddlers out there have any BakePacker recipes you'd be willing to recommend/share.
