Thats exactly correct ST. I haven't glanced in recipe for quite a few years and have forgotten its existence. Perhaps "fast and loose" might be the best way to play in this instance?

I'll keep that in mind when the time comes. I forgot ALL about that section, and I'll bet others and most newbies have too or don't know it’s there at all. Like the PCD issue, it’s something that’s often overlooked unless someone makes a gaff like I did.

Since I lost my deer hunting hunting ground when my brother sold his farm, I haven't been able to use my venison jerky recipe.
Jerky and sausage are always part of our trips.

Probably going on 15 years ago I hiked the Wonderland trail around Mt Rainier. I was befriended by a Scout Troop and the Scoutmaster who was, shall we say, not your typical scout leader (more of a "biker dude"). Anyway.......we are taking a break and one of the Scouts opens a plastic bag and hands me a piece of Jerky. Truth be told, the dang stuff looked like shoe leather but I didn't want to offend so I took a piece. It was amazing and incredible.
I bumped into them 3 times on the 100 mile trail as they were doing trail work. The last time the Scout leader (we had several evening chats and had become friends) and I met he handed me the last of their Jerky and told me the name......"Stewarts"........he had driven an hour to get it. I was determined to make the stuff last but within several hours it was gone........simply put it is amazing.
Been hanging out on NWhiker forum in preparation for a backpacking trip and someone posted the link to Stewarts......I'm sure that was the name of the place now that I read it again. Anyways, thought I would share it. Check it out, good stuff!
