We basically have a kitty litter box full of spices, oils and ingredients (dried tomatoes, dried shiitake mushrooms, pine nuts, rice etc etc) and he concocts mouth-watering dishes on the spot to go with whatever smallmouth, walleye or pike we caught that day.

Of course it makes for a heavier food pack, but as Smashdancer's brother told him years ago when our Quetico groups merged: "Don't skimp on the food. We'll carry it."

I had my fill of lightweight freeze dried food during my backpacking days when weight was really a factor.

Now I make my own mixes up and don't mind carrying the weight either because I'm a big eater and LIKE a nice meal at the end of the day.

I WOULD like to know what's in that side-dish, It looks good AND healthy which is the way I strive to eat.

Here's what he said, and he's re-creating his moves based on the picture:

"In skillet, brown chopped garlic and whole pine nuts in olive oil. Get the garlic crisp. Care not to burn. Set aside.
To olive oil and butter add sea salt and coarse pepper / add diced onions and sun dried tomatoes.
Boil orzo and drain for later use.
Add kale and or spinach to the tomatoes and onions and let heat wilt those greens.
Add orzo. Sprinkle crisp garlic and pine nuts atop and serve.
I no doubt added some spices like paprika and filee powder .. maybe some others."

Here's another one of his side-dish creations. Don't think I have a photo. This was from the list he put together on the spot (Woodside Lake) because we were like "geez, just how many different things did you throw in this?" He might have left a couple off the list. This went with a HEAPING platter of smallmouth fillets:

basmati rice
aborio rice
wheat couscous
multi-color couscous
chia seeds
lentils
brown rice
bouillon cube
paprika
sea salt
cracked pepper
olive oil
thyme
dates
pine nuts
rosemary
file (filee) powder
dried onion
dried garlic
dried peas, corn and carrots

yeah, it was filling.

Was fishing out from the piled-up scree in the shadow of the cliff featured in the Feb. 20 POD one time when my canoe partner badly hooked a smallmouth of about 10 inches.

It wound up floating belly up, and we noticed it was being eyed by an eagle perched in one of those trees you can see on the side of the cliff.

So we backed off, and then watched as the eagle swooped down and grabbed the fish out of the water right in front of us. The eagle was so big you could barely see the fish while it was being carried away.

It returned to the same tree, where we watched it dine.

I used to feel bad about losing a fish, but then I realized that NOTHING truly goes to waste in nature.

Everything winds up food for something and sometimes like with that eagle it makes for an exciting moment.

Newbies find that out real quick when the leave a stringer of fish dead OR alive unattended for too long.  Shocked Cry Cry

That's a perfect set-up, water view, not to much sun and IF you roll out like I've been known to do, it's a flat drop to Mother Earth.  Shocked Grin Grin
