Pancake mix is basically as light (if not lighter) per calorie as oatmeal, probably lighter/calorie than energy bars or granola bars. The big source of weight is a pan to fry them in but as a fisherman it's probably already in your kit.

You could get better temperature control by cooking them over a fire. A few years back I changed from Whisperlite to Dragonfly just to get better simmer control.

I've had diffuser plate forever with my 25 yr old Coleman Peak 1 stove. Even at the lowest simmer, you could burn things. I just looked but my diffuser has no name on it.

DD is right, they are getting harder to find. You can DIY, guys use paint can lids etc.

I found this TomT, I think it just might solve your problem? Read some of the reviews. People use it for their backpack stoves. Some say it warps a little after a while, but being aluminum you just pound it flat again.

Actually, the one I like the best is the (You need to Login or Register to view media files and links), which I generally use without the riser bar.  It is a tad lighter than the diffuser plate you linked to.  I have a couple and the ridges make them nest nicely if I actually carry more than one.  I've never had an issue with warping.  Maybe the ridges make that less likely.

It’s the syrup that creates the extra weight. On group trips I would pack a bottle of it or fill those plastic tube thingies with the roll lock bottom. They were heavy!  But, 2 pancakes breakfasts with bacon seems like a good idea. Open fire is fun once in awhile too.

That Scorch Buster you linked to looks exactly like mine except it didn't come with the wires. Sadly they are no longer available per website.

IF you just going solo, do what I did. I put the mix for one meal in a ziplock, made about 4-5 teacup plate-sized pancakes. Instead of bringing syrup in a bottle, I bring these. 2 packets are about right for 1 meal. Sometimes I get fancy and spread jam between layers and then the syrup.

Tom-

Simple syrup (adapt recipe to need)
1 cup water
1 cup brown sugar
Dash of vanilla
Mix together and heat until all sugar crystals dissolve.

Pancakes are pretty damn good with just butter and brown sugar.
If you wanted to be creative and authentic you could pack maple sugar candy and dissolve in an equal volume of water and heat.

Me- I grew up woking one of the larger sugar bushes in Wisconsin. Syrup means maple syrup- luckily it requires much less volume than "pancake" syrup to achieve the desired effect.

ON a group trip I'd never bother with pancakes. Too much hassle and too much waiting.

Totally agree about syrup--it means maple syrup.  Once we discovered the wonderful "Wild Country" Maple Syrup from Lutsen, we have never eaten a pancake without it!  (Have two bottles in my pantry right now.)

Packed a little bottle on every canoe trip, as pancakes were our "go-to" breakfast most days.  If you could find blueberries, they were better, of course.

Never knew there was such a thing:-?
I'll be checking it out now.  Even better if you want to save weight not worry about carrying a liquid that might leak if you're not careful.  Thanks, DD.
