- Walleye fillets
- Peanut oil
- Blackening spices -- available at most grocery stores-- I like one called "Paul Prudholm"
Heat fry pan with light coating of peanut oil (seems to take heat better than canola oil)
Coat fillets liberally with spice mixture.
Cook on fairly high heat turning once
This is a fairly spicy Cajun preparation and goes well with rice or
au gratin potatoes.
