Try some instant/freeze dried scrambled eggs wrapped in a lightly fried tortilla shell.

Try some Zataran's Cajun fish breading for fried fish along with red beans and rice.

And, as soon as I can find it, I'll post my recipe for fish chowder ('taint hard, it's just fish, store-brand dehydrated potatos and you can use the cheese sauce if you like, onions, salt and pepper, maybe a tablespoon or so of Butter Buds, and flour. Mix the flour in cold water b4 adding to the stew.) - be sure to use Walla Walla onions if you can find them. Fish chowder is great for bad weather days, and you can use northern as well as the other species. Try it with steamed Bisquick bisquits.

We don't take mcuh of the expensive backpacker stuff. Store brand dehydrated potatoes, rice dishes, etc are in our food pack. Our pack is a bit heavier, but the food tastes better and we don't often spend more than $20.00 each for a ten day trip.
