For deep trolling for walleye and trout (using in-line or snap weights and say crawler rigs or flutter spoons) what size snap swivels (ballbearing) and swivels do you use for the rig?

I just use something stronger than my line.  So I get a 25# snap.  Your snap is at least four feet from your lure so I don't see any need to have a small snap.  Contrary to what other will say, I don't think the diameter of your line makes any difference especially if you are down 20 feet or more.
