I'm getting a lot of good ideas from these posts. I thought I'd remind everyone that QuietJourney also has a recipe page with camping recipes submitted by users. Anyone posting recipes here might consider also submitting it to the recipe page. That way it won't get lost in the depths of this discussion list as time goes by.

I try to keep the meals as simple, fast, and convenient as possible. Some people enjoy preparing gourmet camp food. I enjoy travelling with those people, but if the cooking is up to me, I'd just as soon boil water, pour it in a bag, eat, and then get on with whatever I want to do next.

I depend mostly on the freeze dried, backpacker meals. They are expensive, but very convenient. If you don't mind eating them out of the pouch, there are no pots or dishes to clean up. I usually bring beef jerky, mixed nuts, and dried fruit to eat for lunches. I've used the Ramen noodle soups and instant mashed potatoes. For the potatoes, I mix all the dry ingredients before the trip and keep it in a plastic jar. I leave out the butter, but add some dried milk powder.
